Having been born in Maine and moving back there before heading to our South Carolina location, I am well aware that more than half the country has stopped venturing out to their grills and smokers. Yet, this is also the time of year for holiday parties, New Year's events and before it gets warm again, a Super Bowl Party!
The stores will be selling a bunch of cheese boards, circles of shrimp and a lot of those logs with nuts and make believe cheese. Fun times, great cocktails and all that, but, let's face it, it ain't BBQ.
While 99% of the planet equate BBQ to an open fire of some kind, you can create great appetizers and finger food without going outside. Now, I know there are those of you who will use a snow blower to get out to your grill and smoker to fulfill your desire for ribs or pork BBQ, and I salute you. Go for it.
But with all the challenges of keeping the smoker at the right temp or even just keeping the grill lit in spite of the blowing winter winds, I just want you to know, there is an alternative to satisfy your hankering for sticky fingers and great barbecue taste.
Here's a great recipe to bring barbecue indoors this holiday season. Whether it's a neighborhood Christmas party or a College Bowl Game, or even the Super Bowl, who doesn't like a huge platter of wings at the party?
WINGS THAT BITE BACK
This recipe is so versatile because we can change the flavor of the wings simply by using another rub and if wings are hard to find, you can use drumsticks in their place.
Ingredients:
Wings (I’m making this for 12 whole wings or 24 drumettes and flats)
½ cup oil (I’m using peanut oil but use your favorite)
½ cup soy sauce
1 tbl Bub ‘n Mutha’s Honey ‘n Heat (for a milder version use CHIXX Dig It)
Zip lock bag
Mix oil, soy sauce and rub in a bowl until well blended. Pour over wings in the bag and seal while squeezing the air out. Let sit for at least one hour at room temp or 3 hours in the refrigerator.
Grilling – Sprinkle more rub on the wet wings and place on the grill as you normally would. Same for a smoker. Cook as usual until skin is crispy and enjoy. Oven – Place wings on baking sheet and sprinkle rub on the top of the wings. Cook at 250 for one hour. Remove and flip the wings, season the upside again and place back in the oven for 45 minutes and check for doneness. For more crispy wings broil for 3-5 minutes after cooking. Air Fryer – Spread wings in the basket or tray and season like the oven. Follow your air fryer directions for wings. At the halfway mark, turn and season the other side.
